Lighter is Better

In order for our coffee lovers to enjoy some of the most delicate aromas and flavors, we choose only to lightly roast our coffees. We made that conscious decision knowing that it would go against the industry tradition. We see light roasting as a way to highlight the distinctive flavors that each of our bold and complex coffees possess.  In contrast, dark roasting kills distinctive flavors and masks imperfections of the coffee bean.

We freshly roast our coffees in small batches in the Washington, DC area using a Diedrich 12 kilo coffee roaster.  An artform in itself, our expert coffee roaster relies heavily on his senses to trace the development of the coffee bean throughout the roast, seeking to bring to full potential the most unique characteristics of each harvest.
